Clara's Red and Green Cabbage Salad

My mother inlaw was a fantastic cook. Her specialty was making salads. She gained much of her expertise , when employed as the salad maker for Stan Hack's Restraunt , where this business which once flourished in Grand Detour Illinois. ( Stan hack was a former Chicago Cubs player and retired , opening a this wonderful restraunt along the Rock River in historic Grand Detour)
This is delicious and just in time for those of you looking for a recipie for that cabbage( a great antioxidant) you will soon be harvesting from your gardens ( or purchasing from markets)
1/2 head green cabbage, cored and cut in thin strips
1/2 head red cabbabe, cored and cut in thin strips
6 tablespoons sherry vinegar
1/2 tsp cumin seeds
Freshly ground black pepper
4 slices bacon, cooked until crisp and crumbled ( artificial baocon bits ok to use for less fat )
salt
1 small carrot peeled and finely diced
1 apple peeled and finely diced
3 tablesppoons finely chopped flat leaf parsley
3 tablesppons walnut pieces lightly toasted in dry skillet
1 tablesppon sugar
2 tablespoons olive oil
Now remember, we are talking fancier cooking..Myself, I don't happen to have on hand some fresh flat leafed parsley..so I get out the parsley flakes, and I just throw in walnut pieces...no one seems to notice they were lightly toasted in a skillet..ha ha
