I had something like this at Helen's yesterday and it was soooo good!  she is sending me her recipe...will let you know if this is different from hers..but think it is the right one.
Cowboy Caviar

5T red wine vinegar
up to 4T hot sauce (depends on how spicy you like things.)
1T olive oil
1-2 cloves garlic, minced
1/8 tsp black pepper
2 (large) avocados, chopped
1 (15oz) can black eyed peas
1 (11oz) can corn
2/3 cup green onion, chopped
1/2 cup cilantro, chopped
1/2 lb Roma tomatoes, chopped

Mix all ingredients together and salt to taste. Serve with tortilla chips and try not to eat the entire bowl!

 Texas Caviar...



1 (15-oz) can black eyed peas 1/2 cup oil

1 (15 oz)can pinto beans 1 tsp. salt

1 (15 oz )can white corn 1/2 cup cider vinegar

1 (4 oz) jar pimentos 1 tsp.black pepper

1 green pepper,chopped 1/2 cup sugar (I use 1/4 cup and like it real well)

2 stalks celery, chopped parsley and garlic (to taste) I used the minced garlic

from a jar.

1 cup red onion, chopped bag of Fritos scoops

2 Jalapenos; (optional)



Drain canned vegetables; set aside in bowl with other vegetables. Bring dressing: oil,salt, vinegar, pepper, sugar, garlic, and parsley, to a boil. Let cool and pour in bowl over veggies. Let marinate for a couple of hours. Keep cold and serve with Fritos. I used fresh parsley and chopped it rather fine; and use this recipe as a salad also. Keeps well refrigerated.
