 Texas Caviar...

1 (15-oz) can black eyed peas 1/2 cup oil

1 (15 oz)can pinto beans 1 tsp. salt

1 (15 oz )can white corn 1/2 cup cider vinegar

1 (4 oz) jar pimentos 1 tsp.black pepper

1 green pepper, chopped 1/2 cup sugar (I use 1/4 cup and like it real well)

2 stalks celery, chopped parsley and garlic (to taste) I used the minced garlic

from a jar.

1 cup red onion, chopped bag of Fritos scoops

2 Jalapenos; (optional)

Drain canned vegetables; set aside in bowl with other vegetables. Bring dressing: oil, salt, vinegar, pepper, sugar, garlic, and parsley, to a boil. Let cool and pour in bowl over veggies. Let marinate for a couple of hours. Keep cold and serve with Fritos. I used fresh parsley and chopped it rather fine; and use this recipe as a salad also. Keeps well refrigerated.
